After manual harvesting and transportation to the mill, the oil is produced mechanically and cold-pressed to maximize its full aromatic expression and preserve its organoleptic characteristics. The result is a lean and aromatic olive oil that reveals a bright color with green tones, tending to yellowish with aging. On the nose, it displays a fresh and fragrant character with fruity and chlorophyll notes.
