Available size: 10lb+ Brisket, Fresh The brisket is made up of two different muscles: the point and the flat. The point cut is the fatty part of the brisket, which is called the deckle. The flat cut, also known as "first cut", has the deckle removed, which makes it leaner and causes it to lay flat. Brisket, which comes from the breast of the cow, is one of the tougher cuts of beef. When braised, smoked, or slowly roasted, it's rendered soft and tender with amazing flavor. Untrimmed beef brisket has the reputation of being among the least expensive cuts of beef you can buy. However, after it’s cooked low and slow, brisket loses nearly half its weight in meat. On the other hand, a fully trimmed brisket requires skilled trimming and you pay for that. Beef brisket is also not a volume item like ground beef. As a specialty item it will command a higher price. Our grain-finished boneless beef brisket is hand cut and trimmed; then it’s wet aged for your dining pleasure.
